Inspired by The Beach Boys’ hit 1982 song, “Kokomo” we wanna take ya behind the bar as we recreate one of our favorite mocktails. Whether you are planning for a dry or a damp January, enjoy a refreshing sip of paradise either at home or at RT60 Rooftop Bar & Lounge.
Ingredients
- 1.5 oz Orange Juice
- 1.5 oz Coco Lopez
- 3 oz Pineapple Juice
- 0.5 oz Espresso (or cold brew)
How to Make The KoKomo Mocktail
- In a shaker, combine Orange Juice, Coco Lopez and Pineapple Juice.
- Add ice and shake.
- Strain over crushed ice.
- Float your espresso (or cold brew) on top.
- Garnish with a mint sprig and dried pineapple slice.
